  • Attention to detail

During the production of desserts, every step is carefully and meticulously completed according to the standards, all of which need to be done by hand since the pastry chef's techniques and recipes are very critical.

  • Carefully selected ingredients

Choosing high-quality raw ingredients and ingredients is the highest amount of respect one can give to a delicious dish. A pastry chef's knowledge regarding the quality of commonly used ingredients is very important since the quality of the ingredients will directly affect the final result.

  • Enjoyment of Art

Modern people's affinity for desserts has gone way beyond the singular requirement of the dessert having to taste delicious. Each dessert needs to be unique, has an original shape, and has to be beautifully decorated.

It can be said that every delicacy is an artistic performance, where people can experience the exquisiteness of life and enjoy life’s experiences.

Selection Method

The Cannes Dessert Prize invites dessert masters from all over the world for evaluation every year, and the GSA committee assigns commissioners to go to the local area for the selection of quality desserts. All selection results will take the average of the score total provided by the professional reviewers, and a quality medal will be awarded based on the final comprehensive score.

In order to encourage the store to actively innovate and promote the use of natural and additive-free ingredients, the annual innovation and natural-ingredients awards will be awarded each year by the Cannes Dessert Prize in addition to the usual gold, silver, and bronze awards. This is the highest honor from the Cannes Dessert Prize and means that the product stands out after going through various rigorous evaluations. The dessert has fascinated the judges with its use of natural ingredients, creativity, and innovation.

It is scored by GSA, and the scoring criteria are divided into primary selection items and secondary selection items. The selections are made according to different items of the desserts:

Primary selection items

In addition to the dessert’s appearance, taste, innovation, and naturalness of the ingredients, the visual presentation, hygiene of the environment, and dining atmosphere are added to the evaluation categories as internal and external factors are part of the selections.

Secondary selection items

According to different desserts, the details of the evaluation are different. For example, the crispness of a crust affects the management of the dessert’s thickness, the filling’s aroma, moistness, stickiness, and the balancing of multiple flavors contribute to different results for the selection.

Four months after the registration deadline, the GSA committee will randomly assign a commissioner to visit each store participating in the selection. More than one commissioner might be assigned to visit a store or contestant as the GSA committee will carry out evaluations and blindly selections to have at least two special commissioners to evaluate the stores to ensure the fairness of the scores and results. The results of the selection will be announced before May of the following year.
