Figaro praliné and Quito ganache starring in the same cake? Christophe Michalak has created for La Maison du Chocolat a snack cake, half pastry/half chocolate bonbon, featuring everything that he loves: a very caramelized smooth praliné in honor of Maison’s “Figaro” with roasted Piedmont hazelnuts, dark chocolate ganache particularly round and intense in honor of “Quito”, a thick dense cake with chocolate fondant then everything is enrobed with chocolate glaze sprinkled with cacao nibs. Gourmand, nomadic and generous, his travel cake is perfect for shipping, sharing, keeps well and is best served at room temperature.
