Hironobu Fukano

Hironobu Fukano is a pastry chef, trained at the “Tsuji” cooking school in Tokyo, Pastry section. After the first experience as a cook in an Italian restaurant, his crush on pastry making is confirmed thanks to his meeting with Pierre Hermé and the discovery of his creations.

He worked for two years with Pierre Hermé at the “New Ohtani” hotel in Tokyo. Then come various experiences, in a French bakery in Chiba, or a tea room in Tokyo, which allows him to refine his know-how and his mastery.

In 2009, Hironobu Fukano met the young and already talented chef Hiroki Yoshitake, whom he followed to Singapore for the opening of the restaurant ”Hiroki88 @ infusion”, of which he then became the pastry chef.

In 2010, Hiroki Yoshitake opened his gourmet restaurant “SOLA” in Paris, with Youlin Ly, and it was only natural that Hironobu Fukano was part of the trip.

The excellent duo - chef Hiroki Yoshitake and pastry chef Hironobu Fukano - notably enabled the “SOLA” restaurant to obtain 1 star in the Michelin Guide just one year after it opened.
