Nicholas Lodge is a pastry chef, cake master, writer, and lecturer. He is the co-owner of the International Sugar Art Collection in Atlanta, which is a retail gallery and a school that teaches cake decoration and sugar art. He is known for creating botanically correct gum flowers. The hotel is in a coaching French pastry school in Chicago, Illinois.

He is a permanent judge of the "Food Network Challenge", and he serves as a judge at Omni Grove Park Inn every year in the National Court House Competition and other regional competitions (Lodge F.Hall of Fame has judged pastry competitions at the regional, national, and international levels).

After graduating from the National Bakery School, Lodge was appointed as the chief wedding cake designer for Woodnutts, one of the top sugar art schools in England. While at Woodnutts, he made cakes for Harrods, Savoy, and The Ritz. Next, Lodge took up a teaching position at the Mary Ford Cake Art Center in Bournemouth. At this time, He was commissioned by the royal family to make cakes for the Queen Mother’s 80th birthday. Rocky was accepted by the royal family and created one of 24 official wedding cakes for the wedding of Mrs. Diana Spencer and Prince Charles. The cake is 9 feet tall and weighs 300 pounds.

Three years later, Rocky was again hired by the royal family to make baptism cakes for Prince Harry. The cake is carefully decorated with swans, water lilies, and a miniature baby in royal swaddling clothes.

For many years, Lodge has been a judge, demonstrator, and guest lecturer of the World Pastry Forum. Since 2013, he has accepted an invitation to become a regular judge and demonstrator of Pastry Live in Atlanta. In 2012, Lodge began to provide online courses through craftsy.com . Currently, Craftsy offers nine Nicholas Lodge courses, and there will be more courses planned in the future.
