Born in Tokyo on July 1, 1968.

After graduating from Tokyo’s Machidamachi Cooking School, Aoki worked in a patisserie in Tokyo. In 1991, he moved to France and started working in the restaurants of Jean Millet and Pierre Couderc in Paris. He also served as a three-Michelin-star chef in the restaurant of Frédy Girardet in Switzerland.

In 1998, Aoki opened his first studio in the 7th arrondissement of Paris and moved to the 13th arrondissement of Paris in 1999. In this studio, he started making pastries for tea rooms, restaurants, hotels and receptions. During Paris Fashion Week, he also started delivering pastries to fashion brands such as Kenzo, Yohji Yamamoto, Chanel, Ungaro and Christian Dior.

In 1999, Aoki also took charge of the French office of the All Japan Confectionery Association.

In 2003, he opened a second boutique in the 5th arrondissement of Paris. In 2004, he opened another boutique in the Lafayette gourmet district of the French department store Galeries Lafayette.

Then in 2005, Japan Airlines All Nippon Airways asked him to provide desserts for business class flights departing from Paris. In March 2005, he opened the first specialty store in Japan in Tokyo Marunouchi. He opened his second Tokyo specialty store in 2006 at Isetan Department Store in Shinjuku, Tokyo.

In 2011, he was nominated by Gilles Pudlowski as the best pastry chef of the year. During this year, Aoki also cooperated with the three-Michelin star chef Anne-Sophie Pic to participate in the Salon du Chocolat.

In 2013, Aoki participated in the Salon du Chocolat again and was one of the 12 chocolate brands that received the highest score.
